  • 4 cloves fresh garlic, minced
  • 1/2 cup unsalted butter
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp fresh lemon juice
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 2 tbsp low-sodium soy sauce

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper, then cut into bite-sized pieces.
  3. In a mixing bowl, combine melted butter, minced garlic, lemon juice, soy sauce, smoked paprika, and black pepper. Whisk until well blended.
  4. Toss chicken pieces in half of the buttery mixture until coated.
  5. Spread the chicken in the prepared baking dish and drizzle with remaining buttery sauce.
